Vegetarian Chili Recipes: My Two Best Chili Recipes

I love vegetarian chili with a passion {I'm a vegan so I don't eat meat at all}. So I would like to share my two best chili recipes - even though I've never tried one of them! Sounds weird, I know, but I just got this recipe from the Negative Calorie Diet folks and I already love it - just because it has one of my favorite foods in the world: potatoes. The only thing that can make a recipe for chili more perfect is to have potatoes in it! :-)

* 1 tablespoon of olive oil
* 1 onion chopped
* 1 red bell pepper seeded and chopped
* 1 green bell pepper seeded and chopped
* 3 tablespoons of chili powder
* 1 cup water
* 1 15 ounce can of drained pinto beans
* 1 15 ounce can of drained red (kidney) beans
* 2 15 ounce cans of Mexican style stewed tomatoes
* 1 large chopped red potato

Over medium high heat, pour oil into an oven-proof skillet. Sauté the chopped onion and bell peppers until lightly browned. Add 2 tablespoons of the chili powder and cook for another minute. Pour the drained beans, tomatoes, and water into the skillet. Bring mixture to a boil over a high heat for 20 seconds
then take heat down to simmer. Simmer on medium heat until the mixture thickens - about 20 minutes.

Preheat oven to 350 degrees when you have 5 minutes left. Turn the heat off the mixture -- spread the grated potato across the top of the mixture and then add the last tablespoon of chili powder evenly over the top of the grated potatoes. Insert mixture into oven in your oven-proof container. Bake at 350 degrees for 20 to 35 minutes or until the grated potatoes turn golden brown.

I will change this recipe by adding the potatoes into the chili mixture on the stove and simply stirring them in. I see no reason to bake this recipe for chili. Also, I will saute the onion in water that has a dab of seasoning, rather than using oil - and I detest green peppers in chili recipes. Why, I'm a Texan and we invented chili ... I can tell you right now that no real Texan would ever put green pepper in a chili recipe! :-)
