In today’s culture we are so obsessed with food and weight that we sometimes forget that food is an almost sacramental experience, and one that should nourish body, mind and spirit. Looking at some of today’s popular diets it’s obvious that we have forgotten the sensual joy that should come from food and one of my personal favorites is chocolate pudding that I make in my Vitamix blender.
I’m a vegan, so it’s not always easy to find something to eat. I don’t like most of the vegan foods that dry in a dehydrator for days and I don’t want all the high calorie foods that involve nuts, for instance, so creativity is important.
Instant pudding tastes pretty bad, IMO, and stirring cooked pudding on the stove isn’t fun or easy – it’s boring and it’s easy to burn the pudding. So Vitamix pudding is a perfect answer: REAL pudding without stirring or burning.
Easy Pudding Recipe
+ 2 cups almond milk {you can use rice milk, but I think the almond milk tastes richer}
+ 1/4 teaspoon salt
+ 1/4 cup sugar {most folks prefer sugar, but I use 1/8 cup sugar and 1/4 teaspoon powdered stevia}
+ 4 tablespoons organic corn starch
+ 2 ounces chocolate
+ Replacement for one egg {I use Bob’s Red Mill Egg Replacer}
+ 1 teaspoon vanilla
+ Most pudding recipes call for some butter so I throw in an envelope of Butter Buds or a Tablespoon full of Molly McButter. This isn’t absolutely necessary, though
Put milk, salt and sugar/stevia in your Vitamix blender. Begin with the lowest Variable speed and quickly increase to High. Run for 3-4 minutes and add corn starch through the top and run for another couple of minutes until your pudding is getting thick. Drop in the chocolate and egg substitute and run 1-2 more minutes. Turn off the machine, add the vanilla and butter substitute (if desired) and chill.
Pudding Variations That Are Just As Easy
* Lemon pudding is beyond scrumptious: simply add lemon extract, instead of chocolate.
* (Except for Starbucks – yum!) I don’t drink coffee, but a small amount of instant organic coffee makes a killer mocha pudding.
* If you love vanilla pudding, then double the vanilla and you can add a few strawberries, raspberries, cherries or some coconut.
* After you’ve made your pudding, throw in some chips: more chocolate (too rich for me) or butterscotch or peanut
* I love dried cranberries in my pudding, but soak them a bit in water, first. If you’re having company, you can soak the cranberries in rum or bourbon before adding to the pudding.
* I don’t like mint, but my kids do and they love this pudding with mint extract added.

is this really thin before it chills? I went by the recipe in the vitamix book which is the same except you add the cornstarch right away. It’s sitting in the fridge cooling, but is not at all thick!
