Those of us who love food – meaning, the entire human race (with a few weird exceptions) – naturally cast a calculating eye on the dessert table. And my go-to dessert for every event is Blueberry Bliss. My pan full of this delicious concoction has traveled to many, MANY places and it is always a hit. In fact, someone, usually several someones, asks for the recipe. I don’t remember where I first found this recipe, but it’s a goody.
Ingredients
✼ 1 angel food cake
✼ 8 ounces cream cheese, soften to room temperature
✼ 1 cup milk
✼ 1/2 cup confectioners sugar
✼ 1/2 teaspoon vanilla
✼ 2 containers of Cool Whip or other dessert topping
✼ 1 can blueberry pie filling
✼ 9″ x 13″ pan: this size is approximate but the recipe makes approximately two cake pans full of yummy-licious dessert
1. Tear your angel food cake in pieces and drop them into your pan. If you’re an amazing cook, you can make your own cake but I just buy one at the grocery store.
2. Using a mixer, beat the cream cheese until it is fluffy. Then add the milk, confectioners sugar and vanilla and beat until it is soft and well mixed.
3. Using a spatula fold in two containers of Cool Whip and pour the entire mixture over the angel food cake pieces.
4. Top with blueberry pie filling and place in the refrigerator for several hours.
This is one of those recipes that is better the next day when all the flavors have blended together. I don’t know how it gets after several days because a day and a half is about as long as this dessert has ever lasted in my home. :-)
Alternate toppings: blueberries really are a good choice because the berries are so small that they cover the cake and cheese. Cherries are my favorite fruit but there aren’t many berries in a can of filling, so unless you want to cut up individual cherries it won’t spread as far. You could experiment with other toppings, though. Coconut and nuts come to mind. Every time I try a variation I hear a storm of protest from my family so I’ve only used these two berries.
