For weeks I've had a mysterious rash on my arms. It wouldn't go away and I didn't know the cause until my chiropractor figured it out for me. He's not just an excellent chiropractor – he's also an expert in kinesiology. According to him, SUGAR was the cause of the rash.
That seems really weird to me because I'm reasonably careful about sugar – or so I thought. Then I started paying more attention to my food and realized that sugar is in almost everything. Here are three of my staples that really hurt:
* My whole wheat pasta is fine but just about every pasta sauce in the store has sugar in it.
* Bread: I can buy Ezekiel brands or go to Whole Foods but 'normal' bread has some kind of sugar every time.
* Salad dressing: EVERY dressing on the shelf has sugar in it. I found one in the produce section that did not. Only problems are that it's very expensive and is 130 calories per spoonful. Ouch.
So I decided to spend some time finding replacements that I can make quickly, easily and inexpensively. That pasta sauce is easy, of course. And I want to share my 'new' salad dressing recipe now.
My Sugar Free Salad Dressing
It has only 3 ingredients:
* A pint container of Chobani greek yogurt
* 1 envelope of Hidden Valley Ranch seasoning
* Some unsweetened almond milk (although there are other milk choices)
HOW-TO: that is obviously simple – just mix them together. The milk is just to make the dressing more 'liquidy' and pourable. The amount you use is up to you but I just poured a small amount and kept adding until I was happy with the liquidity.
CALORIES: 285 for 2 cups! Awesome. I can pour the dressing with a really heavy hand – and I have.
SUGAR: none
FAT: none
PROTEIN: 23 grams per cup, 46 total for the recipe
It tasted even better the next day. I've tried other yogurt-based dressings and didn't much like them but I really love this one. Of course, just because I like it doesn't mean you will so you might want to try 1/2 cup of yogurt and 1/4 envelope of seasoning first, just as a test.
The Lesson From My Rash
Every body is different. Most people I know eat lots more sugar than I do (or did) and never get a rash. So we shouldn't 'assume' that what works for others is right for us.
There's an upside to this, though. My chiropractor was right about the sugar and the Mystery Rash is mostly gone. But I feel better because of my decreased sugar consumption and plan to continue it, even if I eat a bit from time to time. Cool, huh? Turning lemons into lemonade by gaining something from an itchy, miserable, red rash.
