Lots of people like Alfredo sauce, but since it’s mostly cream and butter they don’t like the calories. Daphne Oz, the author of The Happy Cook, has a recipe that cuts 78% of the calories. Is it any good – meaning does it taste like anything a human wants to eat? I don’t know but I’m tempted to find out because the magic ingredient is cauliflower. If you’re making a face and going “Ewwwwwwwwww …” you might want to reconsider. For example, I have a cauliflower and potato soup that I make often and it’s delish! You can’t taste the cauliflower but it adds thickening to any dish with almost zero calories.
The Trimmed-Down Alfredo Recipe
> Puree 4 cups of cooked cauliflower, 1 cup of milk and 2 T of butter.
>Meanwhile, saute 1 minced shallot in 1 T of olive oil for two minutes
> Add 1/2 cup of white wine and let everything simmer for two minutes.
> Stir in the puree.
Oz says you can use this sauce anywhere you would use Alfredo – like fettucini Alfredo. I’m tempted but I don’t like wine so will have to think about this one.
