Parsley is supposedly the world’s most popular herb. I planted parsley in a pot last spring, rather than in the ground, and had no expectation that it would survive the winter with its snows (OK, not so much snow this past year), sleet, ice and single digital temps. In the autumn, right before the first predicted frost, I almost decimated the poor little plant because I didn’t figure it would survive.
But look at it now!
Parsley is wonderfully healthy at about 22 calories a cup. It’s an amazing source of vitamin K, which isn’t all that common in plants. It also contains vitamin C, vitamin A and tons of anti-oxidants. But that isn’t why I’m growing it. It’s because I just love the stuff. I often pick a couple of sprigs right out of the pot and just eat them. No matter where you live, you can probably grow this healthy plant, too.
Here is what this pot looked like last year. It obviously is super happy.
